VEGAN RECIPES
I have been vegetarian since I was seven years old and began my vegan journey a few years ago. Growing up on a farm, I learned firsthand the value of living in rhythm with the natural world. By growing our own food alongside my family, I developed a deep appreciation for seasonal eating and for filling our plates with vibrant, nourishing foods.
I strongly believe that food is medicine, and that what we use to fuel our bodies directly shapes the wellbeing of our minds and spirits. Beyond the individual level, our choices as consumers also have far reaching impacts on the world around us. A detailed analysis reported in a 2023 Guardian article found that plant based diets lead to 75 percent fewer climate heating emissions, water pollution, and land use than meat rich diets (Carrington 2023).*
It is my hope that by sharing creative and joyful plant based recipes, more people will see the abundance and possibility within a vegan lifestyle. May this inspire conscious choices that care not only for personal health, but also for the future health of the planet.
